If you don't get the joke, Nori is supposed to be rather... um.. stick-fingered, shall we say? As Jed says in the production vlog #3, "You'd never invite Nori [to dinner] because he would steal all the silverware."
Of course, then some people questioned why they needed a burglar when they already had Nori. Well, Nori is a Dwarf, and he's not too stealthy at moving around. Plus, the dragon will still know the scent of a Dwarf. Hobbits are uber-stealthy and Smaug would have no idea what sort of creature they were. So now you know.
